The Best Baked Potato….Ever

Serves 4

O.K. you are thinking, baked potato, I know how to make that, but it is unbelievable how many people do not actually know how to make a baked potato. Putting it in the microwave for 10 minutes is NOT a baked potato.  It takes time, patience and a little touch that not many people know.

 

Ingredients

4 good sized baking potatoes

2 teaspoons of salt

60g butter or about 2 table spoons

Pepper

 

Method

-          Wash your potatoes and make sure they are fully dried.

-          Slash your potatoes lengthways at least 2cm deep but now fully across, as if you were cutting a pocket hole in the top of the potato.

-          Sprinkle 2 teaspoons of salt into a roasting tin and place the potatoes on top (cut side upwards).the Salt helps to dry the potato out by absorbing moisture, making the potato lovely and fluffy.

-          Cover and seal the tin with foil and place in a pre heated oven Gas mark 7/220C for 1 ½ hours.

-          After 1 ½ hours remove the potatoes and take off the foil from the tin. Brush the potatoes with butter and return to the oven for an extra ½ hour.

-          The skin should be ultra crispy but lovely and soft inside.

-          Remove from the oven and fork in butter and season with salt and pepper if desired.

-          Fill with your favourite filling or just enjoy on its own.
