Lamb Kebabs



Lamb Kebabs


Makes 4-6 kebab skewers


Serve these kebabs in either toasted pittas or in tortilla wraps with lots of cruncy salad leaves or shredded cabbage.


Ingredients

450 g shoulder or leg of
Lamb,  cut into 3cm chunks

150ml natural Yogurt

1 tsp ground Coriander

1 tsp ground Cumin

1 clove crushed garlic

Pinch of black pepper

½ the juice of a Lemon



Method 

-- Mix together the yogurt, coriander, cumin, Garlic,black pepper and lemon juice. Place the lamb in the marinade, mix well, and leave to sit for at least an hour but I recommend leaving the meat to marinate overnight.

-When you are ready to cook the lamb, take it out of the marinade and season, but do not wipe it clean.

-Thread onto metal or wooden skewers, that have been soaking in water for an hour (to prevent them catching fire).

-Grill for 5-10 minutes on a barbecue or under a hot pre heated grill, turning them and basting with the marinade every so often.

- Serve straight away.
