Oatie Salmon fingers
Makes 2 portions
Fish fingers are always a hit with kids and these are a slight twist on the supermarket frozen kind, you will also have the satisfaction knowing exactly what your kids are eating. Oats are also great for as they will help to make your kids feel fuller for longer therefore reducing the temptation of snacking later on.
Ingredients
Approx 200-250g salmon (try to get a thinner longer cut of Salmon rather than a chunky fillet)
4 heaped tablespoons of Oats
2 teaspoons of olive oil
Method
- Remove the skin from the salmon (the fishmonger will do this for you or buy skinless if buying it pre packaged)
- Cut the salmon (across not lengthways) into strips, ideally you will need 6 strips.
- Drizzle the strips with 1 teaspoon of olive oil and rub into the salmon.
- Place 4 heaped tablespoons of oats on a plate and roll each salmon strip in the oats.
- Place on a baking sheet which has been oiled with 1 teaspoon of olive oil and bake in a pre heated oven gas mark 6/200C for 18-20 minutes, turning half way through cooking.
Remove from the oven and serve with your chosen accompaniment.
