Chorizo, mixed bean and pepper soup
Serves 3-4 people
This soup is a great pick me up soup which warm the heart on a cold winters night. Somehow it is also great for hangovers and gives you an extra boost when you need it most.
Ingredients
260g Sliced chorizo
1 red onion
1 tin mixed beans (drained and rinsed)
1 red pepper
1 tin of chopped tomatoes
2 cloves of garlic
1 red chilli
700ml of chicken stock
Salt and pepper
Method
- In a large pan heat 1 tablespoon of olive oil and add 1 onion which has been diced and 2 cloves of garlic and red chilli that has been finely chopped (if you like you food spicy then keep the seeds in the chilli if not then remove them). Stir and place a lid on the pan and cook on a low heat for 5 minutes, occasionally stirring.
- After 5 minutes add the chorizo which has been roughly chopped and cook for 3 minutes until the oils from the chorizo have started to release.
- Add the mixed beans and 1 red pepper that has been deseeded and cubed into 1 cm pieces and cook for 1 minute.
- Add 700ml of chicken stock and 1 tin of chopped tomatoes and bring to the boil. Reduce to a simmer and cook for 15 minutes.
- Check for seasoning and serve straight away with a pile of warm crusty bread.
