The Pig is a very versatile animal and all of the pig (apart from the toncils and oink) can be used.
Here is a guide to where certain cuts come from and what they are best for.
Head-Not really available but a good butcher will get you one if you ask nicely. the ears and cheeks are becoming trendy in certain restaurants but the main use for a pigs head is to make Brawn, an Old English dish which is a sort of course Pate.
Spare Rib Roast - mostly associated with Chinese cooking, spare ribs are great cooked in a marinade slowly over a long period of time.
Loin - The most used part of the pig, as this is where pork chops come from, either still on the bone which is part of the rib or off the bone, they are a favourite cut with a lot of people.
Pork fillet also comes from this part and is situated underneath the ribs and is regarded as the fillet steak of the pig, Is is very tender and lean as is hasn't had to do any work, so there is hardly any fat.
Belly - Belly has become more popular over the past few years and is great slowly roasted. It is also a popular cut for making bacon (cured belly). It does have a higher fat content than other cuts, but this can be delicious if cooked correctly.
Leg/Ham - As it says Leg/Ham is used to make Hams or Roasts. Hams are usually joints which have been brined then cured in various herbs and spices. Used a lot in European countries, Making ham is an age old tradition that produces fantastic and flavourful results.
Hock- A cheaper cut it is mainly used for roasting or making soups.
Trotters - Used in chinese cooking but again not really widely available, ask your butcher.
Hand - can be used for roasting or in some cases, making Hams.
