Welsh rarebit with Warm mushroom salad

Serves 2

Welsh rarebit is basically Cheese on toast but with a twist. Once you have had it though you will never go back to boring old cheese on toast and makes a superb lunch or snack.

Ingredients

4 slices of white or wholemeal bread (whatever you prefer)

200-250g mature cheddar

1 egg

1 table spoon of crème fraice

1 table spoon of wholegrain mustard

Splash of Worchester sauce

Black pepper

½ Iceberg lettuce

7-8 Chestnut mushrooms

25g Butter or low fat alternative

1 tablespoon of balsamic vinegar

 

Method

 

-          Into a bowl grate your cheese and add the egg, crème fraice, mustard, Worchester sauce and a good twist of black pepper. Mix all the ingredients together thoroughly.

-          Pre heat your grill and place your slice of bread on a baking sheet. Toast the bread on one side until golden.

-          Turn over the bread and spread your cheese mixture evenly between the 4 slices trying to cover all the surface area.

-          Replace back under the grill and cook for approx 3 minutes until the mixture is golden and bubbling. Turn of the grill and allow to stand whilst you make the salad.

-          Heat 25g of butter in a pan and add the chestnut mushrooms which have been sliced.

-          Cook for 1 minute then add ½ a shredded iceberg lettuce and cook for a further minute until all the lettuce has wilted. Season with black pepper.

Remove the Welsh rarebit from the grill and slice and serve with the mushroom salad  which you can dress with a drizzle of Balsamic vinegar
