With all the different varirties of Chicken on the shelves these days it is hard to know what to buy an which is the best for you.

Thai Green Curry
Thai Green curry is the dish most associated with Thai cooking and this recipe is my version of this classic and truly fabulous dish.
All the ingredients are available in most supermarkets or local markets these days so there is no excuse to get out your wok and try this out.

Don’t bother ordering it from the take away, make your own. It’s quick, simple, tastier and cheaper than your local takeaways......trust me, the key to this dish and with most Chinese cooking is preparation. The dish itself only takes a couple of minutes to make, but if you are well prepared then it will be stress free and simple to do.

This dish is packed full of flavours and is a great meal to do for families, and also as a dinner party meal.
It uses dishes that you should have in your store cupboard so there is no need to rush out and buy special ingredients.

Packed full of Spanish flavours this dish conjours up the essence of Espana.

There are loads of variations on jerk sauces and marinades, and this is my own take on the classic Jamaican dish.

Kung Po chicken is always a favourite Chinese takeaway dish but is actually really simple to make.
Don’t be put off by the amount of ingredients as most of these go in the marinade all at the same time.
As with most Chinese or Asian cooking, preparation is the key. So have all your vegetables chopped and sauces mixed before you start because once you get cooking it is very fast and there isn’t much time to start chopping your veg. (and have some plates or bowls warmed, ready to serve on.)

Southern Fried chicken is a family favourite and is actually quite simple to make. If you like your chicken with a bit more fire then add some dried chilli flakes or try adding the zest of a lemon to give it a little extra twang.
