Carrot and Bean Bhaji

Carrot and Bean Bhaji
Serves 2 -4 people
Most people think that Bhajis are round and deep fried but that isn’t the case. This Bhaji is a great and healthy accompaniment and to be honest I would be quite happy to eat it on its own as a main course.
Ingredients
2 large carrots
100g Fine trimmed beans
1 red onion
5 cherry tomatoes (halved)
1 teaspoon of cumin seeds
1 teaspoon of Garam Masala
½ green chilli (finely chopped)
1 clove of garlic
1” minced or grated fresh ginger
150ml vegetable stock
1 tablespoon of vegetable oil
Small handful of fresh chopped coriander
Method
- Heat 1 tablespoon of oil in a large pan on a medium heat and add the onion along with the garlic, ginger, chilli and cumin seeds and cook for 4 minutes.
- Meanwhile peel and thinly slice your carrots into strips. After 4 minutes add the carrots, tomatoes and beans and cook for 2-3 minutes.
- Add the Garam Masala and vegetable stock and cook for 4-5 minutes until nearly all the stock has reduced. Season with salt and stir in the fresh chopped coriander.
