Tabouleh with a Mediterranean twist

Tabouleh is a Middle Eastern dish made from Bulgur wheat. It is traditionally served with grape or romaine leaves, which are used as utensils.

This recipe gives the dish a Mediterranean twist and can be easily adapted to suit your taste.

You do need a few hours to let the dish cook, but the preparation takes only minutes, giving you time to get on with more important things.

 

Ingredients

140g Bulgur wheat

10 cherry tomatoes (quartered)

¼ of a large cucumber (deseeded and cubed)

1 Handful of fresh basil

1 handful of fresh mint

500ml vegetable stock

½ a lemon

 

Method

-          Place the bulgur wheat in a bowl and pour over 500ml of vegetable stock and cover. Leave to soak for ½ hours.

-          Drain off any remaining liquid and add the cucumber and tomatoes and mix with a fork.

-          Add the basil and mint that has been finely chopped and mix again.

-          Serve in bowls with a wedge of lemon to squeeze over the Tabouleh.

 

You could also add other ingredients such as Black olives, crumbled Feta cheese or as to keep it vegetarian, pieces of Quorn or smoked tofu.
