Mixed Bean Goulash

Mixed Bean Goulash
Serves 2
Goulash originates from Hungary and is made in nearly every household. This recipe is my take on the traditional dish which is usually made with pork or beef. I have substituted these for a mixed selection of beans, but you could also use Quorn pieces if you wish.
Ingredients
400g tin mixed beans
1 tin chopped tomatoes (400g)
1 red onion
1 stick of celery
1 red pepper
1 red chilli
2 teaspoons of Caraway seeds
3 teaspoons of Paprika
1 teaspoon of Oregano
1 tablespoon of tomato puree
150 ml of vegetable stock
Fresh flat leaf parsley.
1 tablespoon of olive oil
Method
- Heat a large pan on a medium heat and add 1 tablespoon of olive oil.
- Slice the onions, celery and peppers into small bean sized cubes and fry in the oil on a medium heat for 5 minutes until they begin to soften.
- Next add the mixed beans which have been drained and rinsed and give the ingredients a good stir.
- Add the Chilli (finely sliced), paprika, caraway seeds and oregano and cook for 30 seconds, then add the tomato puree and cook for a further minute.
- Pour over the chopped tomatoes and add 150ml of vegetable stock and mix well.
- Bring to the boil and reduce to a simmer. Cook for 10-15 minutes. Season to taste.
- Stir in a handful of chopped flat leaf parsley and serve straight away with basmati rice and a dollop of natural yoghurt
